Here is the secret to getting restaurant-quality, ultra-creamy mashed potatoes without watering them down with milk or heavy cream!
The trick lies in using heavy butter, cream cheese (or sour cream), and reserved starchy potato water. Skipping milk prevents your potatoes from turning gummy or watery, while the starch helps bind everything into a velvety, rich texture.
The Secret Creamy Mashed Potatoes
- Prep time: 15 mins
- Cook time: 20 mins
- Servings: 4–6
Ingredients
- 2 lbs (approx. 900g) Russet or Yukon Gold potatoes, peeled and quartered
- ½ cup (1 stick) unsalted butter, softened to room temperature (don’t skimp!)
- 3–4 oz cream cheese (softened) or ⅓ cup sour cream (this adds incredible richness and tang without thinning out the mix)
- ¼ to ½ cup reserved hot potato water (instead of milk)
- 2 cloves garlic (optional, boiled with the potatoes for flavor)
- Salt and freshly cracked black pepper, to taste
- Chives or chopped parsley (for garnish)
Instructions
- Boil the Potatoes
Place the quartered potatoes (and garlic cloves, if using) in a large pot and cover with cold salted water by about an inch. Bring to a boil over medium-high heat and cook for 15–20 minutes until fork-tender. - Reserve the Starch Water
Crucial step: Before draining, scoop out about 1 cup of the starchy cooking water and set it aside. Drain the potatoes thoroughly in a colander. - Mash with Butter & Cream Cheese
Return the hot potatoes to the warm pot. Add the softened butter and cream cheese (or sour cream). Mash thoroughly using a potato masher or a hand mixer until mostly smooth. - Emulsify with Potato Water
Instead of milk, slowly drizzle in the warm reserved potato water, a tablespoon at a time, while whisking or mashing until you reach your desired velvety, glossy consistency. - Season and Serve
Season generously with salt and black pepper to taste. Top with a pat of butter, fresh chives, or parsley.
